Raise your hand if you regularly throw out bananas because you’ve bought too many from the store again and now they are now brown (I see you, raising your hand). Never do this again.
Ultra ripe bananas make the absolute banana bread. We have two kids in our house so we tend to keep a lot of bananas on hand but inevitably, several end up turning before they are able to eat on their own. I consider this divine moment where the bananas start to spot and brown a gift because I know they are crying out to be turned in to deliciously moist banana bread.
I’ll be honest there are very few baked goods that I make on constant rotation in my house, but this recipe is something that I now know by heart. If you’re part of our families inner circle then you’ve either experienced the deliciousness that my banana bread is. What I love the most about this recipe though is that its full proof and really versatile. You can substitute many of the ingredients depending on your dietary needs. I rarely have all of the specific ingredients on hand in my pantry or refrigerator, but you can almost “wing it” with this one.
Fool-Proof Banana Bread
The * signifies that you can substitute alternates for this ingredient:
- 1 ½ cups all-purpose flour
- ½ cup white sugar
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ cup melted butter * (Crisco, margarine, avocado, or applesauce)
- 2 eggs *
- ½ cup yogurt * (any variety or flavor of yogurt or sour cream)
- 1 tablespoon vanilla extract
- 3 ripe bananas
- ½ cup mix-ins * (chocolate chips, walnuts, raisins, granola, fresh or dried fruit, coconut, chocolate candies, etc.)
Preheat the oven to 350°. Spray a 9×5 inch loaf pan with non-stick spray. While the oven is preheating, use a large bowl or stand mixer to combine all of the dry ingredients. Once well combined add the melted butter, eggs, yogurt, vanilla, and bananas. Mix the ingredients together until they are all one consistency. Finally, fold in your mix-ins with a spatula. Pour the mix into the loaf pan and bake for one hour.
